Ingredients

To make this delicious soup, you will need the following ingredients:

  • 2 tablespoons olive oil
  • Half kg chicken, diced into bite-sized pieces
  • 1 onion, chopped
  • 3-4 cloves garlic, minced
  • 1 large carrot, diced
  • 2 cups chicken broth
  • 1 cup broccoli, chopped
  • 1 cup red pepper, chopped
  • 1 tablespoon butter
  • 1 cup shredded cheese
  • Salt and pepper to taste

Procedure

  1. First, heat the olive oil in a large saucepan over medium-high heat. Add the chicken and cook for 8 minutes, or until lightly browned. Add the chopped onion, minced garlic and diced carrots to the chicken and cook for an additional 5 minutes.
  2. Then, add the chicken stock, broccoli, and red pepper to the skillet. Decrease the intensity to medium-low and stew for 20 minutes, mixing frequently.
  3. Eliminate the soup from the intensity. Add the spread and cheddar, mixing until softened. Season to taste with salt and pepper.

Serving

Serve in individual bowls with a piece of crispy toasted bread and a sprinkle of additional cheese. Enjoy!
